OmSAU: Method of super-accelerated production of kombucha

Researchers at the Omsk State Agrarian University (Omsky Biocluster member) have invented a method of super-accelerated production of kombucha for medical purposes. The invention of Natalia Pogorelova, associate professor of the Department of Food and Food Biotechnology of Omsk State Agrarian University, candidate of biological sciences, can put on stream the production of a valuable biological material - Kombucha Zoogloea.

 

Scientific research at the Department of Food and Food Biotechnology has shown the effectiveness of using kombucha in the food industry in the production of products with prebiotics. "The use of zoogley as a functional ingredient solves several technological problems of food production: an increase in viscosity and water-holding capacity, which contributes to the preservation of the freshness of the product. The production of biodegradable packaging materials based on zoogloea, as well as for the substrate in the packaging of food semi-finished products, is also promising," noted Natalia Pogorelova.
