Russia has a cheese proficit, a forecast published by the Russian Dairy Research Center. So, in 2016, the excess cheese amounted to 65 667 tons, and by the end of 2017 this figure can increase to 96 thousand tons.
The data is based on an analysis of domestic production, imports, and also recently received data from the International Dairy Federation on cheese consumption in Russia. The volume of the market for cheeses and cheese products in 2016 amounted to 902.5 thousand tons of products. As a result, per capita production in Russia amounted to 6.15 kg cheese per year, and consumption was 5.7 kg per capita. Thus, the surplus of cheese was 450 grams per capita per year or 65 667 tons.
Due to the serious competition of Belarusian cheese producers, Russian companies are increasing cheese production in the cheapest segments, which caused overproduction and overstocking of the market in 2016, and in 2017 the situation repeated and even worsened. In parallel, there is growing interest in Russia in the production of elite cheeses. So, Q1 2017, a factory for the production of elite cheeses of such types as brie, camembert, with white mold, and also Bavarian blue with white mold crust began to work on the territory of the Korzhi farm in the Leningrad region. The capacity of the enterprise is 153 tons of cheese per year.
