April 1 - 20, 2017, 147 samples were taken to the Expert Veterinary Laboratory of Omsk Reference Center of Rosselkhoznadzor, with which 312 tests were conducted. In 13 cases, specialists found inconsistency of regulatory documentation.
Listeria monocytogenes is found in four samples of pork semifinished product (Listeria monocytogenes is a gram-positive rod-shaped pathogenic bacterium that can reproduce in foods even in cold storage rooms). Getting into the human body, this microorganism parasitizes inside the cells, accumulating mainly in the liver and spleen and causing a serious disease - listeriosis.
Bacteria of the E. coli group are found in ice cream, in two samples of butter and cheese. Five samples of cheese did not meet the requirements of regulatory documentation for organoleptic indicators. Organoleptic analysis - sensory analysis of public catering products with the help of smell, taste, sight, touch and hearing, usually precedes the physico-chemical and microbiological, which allows to more fully assess the quality of products and improve the efficiency of control.
